Since I don’t have use for a gun but do want to shoot video on board (have another one hold the camera); are there any specific FARs about this, other than the rule of determining interferance with the avionics ?

I know of no U.S FAA regulations that would prohibit the use of video equipment as long as the PIC has determined that this is safe under IFR (portable elecronic devices). To be sure, I suggest you check this on a non IFR flight. I was amazed to see just how much my portable CD player caused a drop in satellite reception (of course my #2 comm caused a similar drop as well).
